Brie en Croute
1 puff pastry
1 wheel of brie
2/3 stick of butter cut into 3 pieces
1/2 cup chopped pecans
1/2-1 cup brown sugar
preheat oven to 400 degrees farenheit
1 frozen puff pastry thawed and brought to room temperature unfolded and laid flat on a buttered baking sheet
1 wheel of triple cream brie (I like to shave the outside a bit, and then let it come to room temperature)
Place the brie in the center of the flat, unfolded puff pastry,
cover the brie with the brown sugar, put the chunks of butter on top of the brown sugar, then sprinkle the pecans on top of the butter and sugar. Fold the corners up to cover the brie and toppings and press the edges together. If you put a little water on the edges they will stick together better. It looks like a big square when you are through assembling. Place in the center of a greased baking sheet (I take a piece of butter and just rub it all over the bottom of the baking sheet), bake for 20 minutes or until the top is a nice golden brown. Remove from the oven and let it sit for 5 minutes, then slice up and serve on dessert plates, being sure to scoop up any of the melted liquid in the pan and drizzle it over the serving of en croute. This is one delicious treat!
